 Since mare's milk loses most of its properties above 45°C, the Yasuke farm has chosen freeze-drying as its drying method. This cold drying process is the one that best preserves the milk.
 For the first 5 weeks, the mares' milk is exclusively reserved for their foal, then they move to milking once a day, the foals remain in permanent contact with their mother and are weaned late for their well-being.
